Jasmine teas are made by scenting green tea with fresh jasmine flowers, which are picked during the day but stored until the evening when they open to release their perfume. The dried tea and flowers are piled for several hours. When the heat inside the pile increases, the flowers begin to release their perfume, allowing the tea to absorb.
