Bitter buckwheat (fagopyrum tataricum) is a traditional staple food of the Yi people in Liangshan Prefecture where is a high and cold mountainous area without industrial pollution. In the 1980s, it was found that the bitter buckwheat is very rich in nutrients and medicinal compounds and it is much healthier than rice, wheat, and maize. Research has proved that it can be used for preventing many diseases.
