Function:
Lycopene is a carotenoid, like beta-carotene, that is responsible for the red color in tomatoes. Research shows that lycopene prevents oxidation of low density lipoprotein (LDL) cholesterol and reduces the risk of developing atherosclerosis and coronary heart disease. Lycopene in tomatoes can be absorbed more efficiently by the body after processing through temperature changes. A higher intake of lycopene seems to be responsible for reducing incidence of cancer as its potent antioxidant which possibly inhibit growth of cancer cells. Meanwhile, lycopene may also help prevent heart disease through this same antioxidant mechanism via an inhibition of oxidative damage to LDL cholesterol. Also, lycopene is known in protecting the skin from the damaging effects of ultra-violet light radiation.
